I bought a sausage stuffing machine and grinder, but can not find a recipe for sausages

There is an entire book about meat and canned goods to make () mainly meat and is written specifically for the home cook in mind. Really very good information if you are interested in their own sausage, because it also includes many useful tips on food safety (very important when working with meat dry-cured/smoked, of course). It also includes recipes of beef jerky, bacon, bacon, sausages, salami, and tons of other things.

I received a copy for Christmas and loved it.

Anyone can be a chorizo sausage. You need a smoker to reason.

The only alternative is to use a little liquid smoke, but it is more complicated.
